- 8 apples of any variety
- 1 cup chopped peanuts or any topping as desired to use
- 1 cup heavy cream, divided
- 3/4 cup light corn syrup
- 1/2 cup (1 stick) unsalted butter
- 1 cup sugar
- 1 teaspoon vanilla extract

Directions to Make
Wash and completely dry each apple that you are using to apply caramel to. After clean, skewer a stick or popsicle stick into the apple before adding any caramel to it for easier handling of the apple when dipping.
Line a baking pan with foil and place the chopped nuts or the toppings desired into the pan. Make sure the pan is big enough to withold all of the toppings comfortably for applying to the apple in a later step.
Fit a large-bottomed pan with a thermometer. Over a high heat source, cook only 3/4 of the 1 cup of cream, the 3/4 cup light corn syrup, 1/2 cup of butter and sugar to 280 degrees°F. The syrup will turn golden once you've reached the appropriate heat/mix ratio. Once that is done, remove the pan from the heat source and carefully swirl in the leftover 1/4 cup of cream as well as the vanilla extract. Please be advised that the pan might be very hot so please use extreme caution.
The caramel should now be hot, in which you can dip the apples into the caramel to coat the entire apple while allowing the excess to drip off. Once dipped, you can then dip the bottom of the apple into the baking pan lined with your chopped nuts or toppings and finalize by letting the apple cool on a baking sheet lined with non-stick spray or paper.
